Another breakfast variation

Here is another real food breakfast I pulled together in no time flat this morning.  It included leftover rice, 1 can of organic pintos, 1 onion, 1 green pepper, garlic, 1 zucchini, 6 Roma tomatoes and 2 handfuls of spinach.  These were the veggies I had sitting around and so I decided to take a Mexican twist to breakfast instead of Asian.  I also threw in some chili pepper and cumin to spice it up.  I served it w/ a side of scrambled eggs, avocado and salsa condiment.  We rolled up the plated goodies with  whole wheat tortillas.  I have a tendency to make one enormous one while Boucci is much more fastidious.
