Udon Noodles

This recipe is one of my go-to favorites for when I want something relatively quick and is a great alternative to ordinary pasta and sauce.  You can do a lot of improvisation with the veggie portion of the ingredients and it still turns out delicious.



Udon noodles cooked per directions on box/bag

toss with several tablespoons of tamari and a couple dashes of dark sesame oil

Sauted veggies:
1Tbs minced ginger
2 cloves garlic
(optional red pepper flakes)
1 onion
red pepper/banana pepper
greens (bok choy, spinach, kale etc)
Saute veggies until tender (add greens in the last minute or two)
season with tamari and nutritional yeast
For more heft to your meal you can sear or bake tofu, season with tamari until golden and toss with nutritional yeast.
Toss everything together and serve
